Healthy Recipe: Steamed Tomatoes and Capsicum

A quick, easy and very healthy recipe. And the bonus point: Tasty too. This recipe will take 15-20 minutes in all from start to finish. Eat it for breakfast or as an evening snack.

Steamed vegetables is the first choice for weight loss and healthy lifestyle. Here is a little twist to add some fun and taste to steamed vegetables so that next time you don’t make a face while cooking them. Here we go with the recipe.

Healthy Recipe: Steamed Tomatoes and Capsicum

Ingredients:

  1. 4 Tomatoes, hard and long
  2. 2 Green Capsicums, hard and medium size
  3. 200 gms mashed fresh cheese (known commonly as paneer in India)
  4. 1 onion, finely chopped
  5. 1 green chilly, finely chopped
  6. Few sprigs of Coriander, finely chopped
  7. Salt and red chilli powder to taste

Directions:

Step 1: Cut the tomatoes and capsicums in halves. Scoop them out. Use a knife or a scooper to do it. Do ensure that the base of tomato and capsicum remains intact. Do it slowly and carefully to avoid any deep cut or hole at the base with the knife.

Step 2: Filling: In a big bowl, mix mashed fresh cheese, chopped onions, green chillies and coriander together. Add salt and red chilli powder as per taste. You can also replace red chilli powder with black pepper powder. Fill in this filling in scooped tomatoes and capsicums till the brim.

Step 3: Steaming the vegetables. There are various ways to steam. You can use a steamer or a microwave for the same. I have used the Tupperware Steam It. Carefully place the tomatoes and capsicums on the steamer and let it steam for 5-7 minutes. Incase, you do not have a steamer, use the microwave. Place the vegetables on a microwave plate and run it for 4-5 minutes.

Step 4: The Steamed tomatoes and Capsicums are ready to serve. Carefully take them out and place them on a serving plate. Decorate them with coriander leaves.

Tasty & healthy.
Add anything crunchy to change the taste and make it interesting.

Optional: Pour anything crunchy over the steamed tomatoes and capsicums to make it peppy. This will be helpful incase of children and guests. Also, sprinkle some herbs available at home to add a zing to the taste.
